About Asafetida
Asafetida, or hing, is a resin dried from the roots of giant fennel plants (Ferula) that grow in Iran and Afghanistan. It smells strong and sulphurous when raw, but mellows into a savoury, onion-and-garlic flavour when cooked in oil.
